  • 1 tablespoon olive oil
  • Salt, to taste

Melt 1 tablespoon butter and 1 tablespoon olive oil in a small pan over medium heat. Once hot, add the onions and sauté until soft and translucent, about 10 minutes.

Incorporate the grated potatoes into the pan and season with a good pinch of salt. Cook for about 15 minutes on medium heat until the potato is just cooked through, tossing occasionally with two wooden spoons for even cooking.

4. Combine Cheese

Mix in 250g (8.8oz) of the cubed Montasio cheese, stirring for a couple of minutes until the cheese is well combined and starting to melt.

5. Form the Frico

Spread the mixture into an even layer in the pan and leave to cook on one side for about 6-7 minutes until golden brown, checking to ensure it doesn’t burn.

6. Flip and Fry

Slide the frico onto a plate, then place the pan upside down on top of the plate and flip it back over into the pan. Cook for another 6 minutes on the other side until golden brown.

7. Serve

Transfer the frico onto a serving board or plate and enjoy!
